PE Bakes: Cinders Cupcakes

I made myself busy in the kitchen again this weekend to bring you some brand new cupcakes - The Cinders Cupcakes (aka the you shall go to the ball cupcakes!). These cupcakes get their name from on especial ingredient in the topping - Cruncie Bars. Cruncies have honeycomb inside and another name for that is Cinder toffee, hence Cinders Cupcakes. For the recipe I used Cruncie bars but you can also use plain cinder toffee. It's actually really easy to make yourself, if you wanted to go that extra edge.

For about 12 cupcakes, you will need:
100g Caster Sugar
100g Butter
2 Eggs
100g Self Raising Flour
1 tbsp honey (you can add another tbsp, but no more than that)

For the Icing, you will need:
150g Icing Sugar
75g Butter
1 tbsp Milk
2 tbsp Cocoa Powder
1-2 Cruncie Bars or Cinder Toffee (for decoration)

1- Preheat you oven to Gas Mark 5/ 375F/ 190C. Line you cupcake trays.

2- Beat together the sugar and butter until creamy and fluffy.

3- Beat in one egg and half of the flour till combined. Repeat with another egg and the rest of the flour.

4- Add in you honey and give one final mix until combined.

5- Separate your mixture evenly between your cases.

6- Bake in the oven for 15 minutes or until golden brown and firm to the touch.

7- Well baking, break up your crunchie or cinder toffee into chunks. Then, inside a plastic zip lock bag, bash the heck out of it using some hard (I used a toffee hammer), until smashed into small pieces.

8- Beat together all the ingredients for the icing until well combined.

9- Using an icing bag, pipe a swirl of the icing in the middle of each cake before sprinkling the crunchie over the top. Stick large pieces in.

These are actually so tasty and the sweet honey taste is nice against the chocolate. You don't have to pipe the icing on if you don't want to, they still look good being iced with a butter knife.You can also put a little bit of icing on as a sort of glue and sprinkle to death the top (see the image above).
